A refreshing, traditional Greek dish made with juicy tomatoes, creamy cheese, and rich Speira Extra Virgin Olive Oil. Perfect for summer – no cooking needed!
Ingredients (for 2 servings):
- 2 Cretan barley rusks (dakos)
- 2 ripe tomatoes
- 100g feta cheese or Cretan mizithra
- 1 small cucumber (optional)
- 1 tbsp capers
- 4–5 Kalamata olives
- 2 tbsp Speira Extra Virgin Olive Oil
- Dried oregano
- Salt to taste
Instructions:
- Lightly moisten the rusks with water so they soften slightly but remain crunchy in the center.
- Grate or finely chop the tomatoes and place them on top of the rusks.
- Crumble the cheese over the tomatoes.
- Add the olives, capers, and thin cucumber slices (if using).
- Drizzle generously with Speira Extra Virgin Olive Oil.
- Sprinkle with dried oregano and a pinch of salt.
Let it sit for a few minutes to allow the flavors to soak into the rusks — then enjoy!
